Pulso Gold is a specially developed dough improver designed to prevent crust flaking in part-baked or fully-baked frozen products. With its high water retention capacity, Pulso Gold helps produce bread with higher volume, a finer crust, and longer-lasting freshness. This product is ideal for a variety of bread types weighing from 30 g to 400 g. It slows the release of moisture from the bread during frozen storage, preventing crust flaking and ensuring better preservation. Pulso Gold also helps maintain the optimum volume of frozen bread during the final baking process, reducing waste and improving product quality. The recommended dosage is 1% of the flour's weight (1 kg of product for 100 kg of flour). It is packaged in a 20 kg kraft paper bag and should be stored in a cool, dry place. The shelf life is 1 year when stored under suitable conditions.
